Summer doesn't start until you have had strawberries and fizz at the Sea Side Restaurant & Bar

Fresh English berries are at their peak of perfection at the moment and classic Cornish strawberries with bubbles form the ultimate summer delight as part of chef David Williams’ celebrate the seasons menu at Sea Side Restaurant & Bar at St Moritz Hotel this month.

The traditional dessert and afternoon tea favourite is created with the juiciest ruby strawberries hours after they have been picked at one of the small family run farms within just a few miles of St Moritz Hotel in Rock, Cornwall. The divine strawberries are paired with Pinot Noir Sparkling Rosé, Polgoon, 2013, Penzance, Cornwall which is a rich pink, summery colour and a golden hue with a nose of zesty, citrus and toasted crumb. It’s a delicate palate with hints of tangerine, honey and spice.

David says:" There is something particularly special about a Cornish strawberry; the association with a cream tea, the connection to a Cornish summer and the British holiday.  I'm fortunate that I have half a dozen strawberry suppliers and growers all within a 20minute radius of the hotel. So we'll keep it simple, we'll embrace the summer; all while digging in to a bowl of sweet Cornish strawberries with smooth beautiful clotted cream and zesty sparkling wine to wash it down with."

Strawberry farmer Jeremy Best from Mitchell Fruit Farm, less than ten miles from the hotel, chooses the crowning ‘Red Glory’ variety for David’s dishes.  This variety is exceptional, he explains, because it is sweet no matter what the weather. For years producers have been focusing on volume and uniform size and shape, only now are they going back to looking at flavour first. Jeremy says while walking through the tunnels on a warm day, you can really notice the delicate and distinct summer strawberry aromatics filling the air.

Those looking for a sweet treat at any time of day can enjoy the classic pairing of Cornish strawberries and local clotted cream served with a glass of the Pinot Noir Sparkling Rosé from Polgoon. Alternatively, choose from either; strawberries and meringue with honeycomb ice cream or strawberries, shortbread and vanilla crème Chantilly.

The new Celebrate the Seasons at Sea Side menu is £14.50, offered every Wednesday at the Sea Side Restaurant & Bar at St Moritz Hotel, Trebetherick, Wadebridge, Cornwall, PL27 6SD.
