Lime Juice 25ml
2 Teaspoons of Caster Sugar
Raspberry Liqueur 37.5 ml
Appleton White 50 ml
8 good sized Mint Leaves
♥ Grab a lime, cut in half and squeeze out 25ml of juice, place in a glass with 2 teaspoons of caster sugar, stir to dissolve.
♥ Fill a glass half way with crushed ice, and add the rum, raspberry liqueur and raspberries.
♥ Pick the mint and place in the palm of your hand, clap your hands together to wake up the flavours and aroma, rim along the glass top of the glass and drop in.
♥ Stir everything up together. Add ice to the top of the glass.
♥ Serve with a mint leaf curled up inside a raspberry.
